材料:
(A) 500克高筋麵粉, 50 克Pfanni薯泥, 3克鹽, 110克糖, 10克即溶酵母, 8克奶粉, 2克麵包軟化劑, 210克水, 150克蛋, 2克麵包改良劑
(B) 100克奶油,
(C) 50克即食卡士達粉, 130克水

Bahan-bahan:
(A) 500gm Tepung Protein Tinggi, 50gm Pfanni Kentang, 3gm Garam, 110gm Gula, 10gm Ragi Roti Segera, 8gm Tepung Susu, 2gm Pelembut Roti, 210gm Air, 150gm Telur, 2gm Doughcon-ACE MB
(B) 100gm Mentega
(C) 50gm Tepung Kaster Segera, 130gm Air
做法
1.将材料(A)以 1 号速度搅拌1分钟,再以 2 号速度搅拌 5 分钟。
2.加入奶油(B)打至面糰富有弹性即可。(大约15-20分钟)
3.基本发酵40分钟,将面糰分割成30克,松弛15分钟。
4.将面糰滚圆,整形揉成圆形放在烤盘上,最后发酵大约30分钟。
5.卡士達粉餡做法:将即食卡士達粉(C)撒在水中,用打蛋器先拌匀,刮底部再拌3分钟即可。
6.發酵好的面包,刷上蛋水,用挤花袋将卡士达餡挤在面包上,烘烤170°C 约12-15分钟。
Method
1. Mix ingredients (A) for 1 minute in 1st speed, then 2nd speed for 5 minutes.
2. Add butter (B) and mix for another 15 minutes until dough become elastic.
3. Ferment for 40 minutes. Scale at 30gm each. Round up and intermediate proof for 15 minutes.
4. Mould into a round shape and place on a tray. Proof for 30 minutes.
5. For the custard ream (C), add water into bowl and sprinkle custard mix on top. Using a whisk blend on low speed to combine ingredients. Scrape down side of bowl then whip on high speed for 2 minutes until smooth and creamy.
6. Bake at 170°C for 12-15 minutes until well baked.
Cara-cara
1.Masukkan bahan (A) dalam mangkuk bancuh dan pukul dengan kelajuan 1 selama 1 minit, kemudian gunakan kelajuan 2 untuk memukul selama 5 minit.
2. Masukkan mentega (B) dan pukul selama 15 minit hingga adunan menjadi liat.
3. Biarkan adunan berkembang selama 40 minit, kemudian potongkan adunan kepada 30gm. Biar adunan berehat selama 15 minit.
4. Membulatkan adunan dan meletakkan di loyang. Biar berkembang selama 30 minit.
5. Inti Kaster (C):Masukkan air dalam mangkuk bancuh, taburkan tepung kaster segera di dalam air , kacau dengan sebati.
6. Sapukan air telur diatas permukaan roti, kemudian bakar dengan suhu 170°C selama 12-15 minit. |
